Pumpkin Spiced Graveyard Cake

SPICED GRAVEYARD CAKE
CAKE INGREDIENTS:
2 cups all-purpose flour
2 cups granulated sugar
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon ground cinnamon
12 ounce Pumpkin Spice Cider
1 cup unsalted butter, cut into small cubes
¼ cup unsweetened cocoa powder
2 eggs
½ cup buttermilk
1 teaspoon vanilla extract
INSTRUCTIONS:
Make the Cake: Preheat oven to 350 degrees F. Grease a 9x13-inch baking pan.
In a large bowl, whisk together the flour, sugar, baking soda, salt, and cinnamon.
In a small saucepan, stir together Pumpkin Spice, butter and cocoa powder over medium-high heat and bring to a boil, stirring occasionally. Pour into the flour mixture and stir with a rubber spatula until moistened.
In a small bowl, whisk together the eggs, buttermilk and vanilla until blended. Add to the batter, whisking constantly.
Pour the batter into the prepared pan and bake until a toothpick inserted into the center comes out clean, 35 to 40 minutes.
FROSTING INGREDIENTS:
1/4 cup butter
3 tablespoons whole milk
2 tablespoons baking cocoa
2 cups confectioners' sugar
1/2 teaspoon vanilla extract
18 Oreo cookies
Black decorator's icing or gel
9 cream-filled oval vanilla sandwich cookies
1 cup whipped topping
Pumpkin candies, gummy worms, other treats optional
FROSTING:
In a saucepan, combine butter, milk and cocoa; bring to a boil. Remove from the heat; stir in sugar and vanilla. Pour over warm cake. Crumble Oreo cookies or cookies of your choice; sprinkle over frosting while still warm. Cool completely.
For tombstone, use icing to decorate vanilla cookies with words or faces; place on cake. For ghosts, make mounds of whipped topping or icing from Oreos; use icing or chocolate chips to add eyes and mouths as desired. Refrigerate for at least 1 hour. Just before serving, add gummy worms and pumpkins if desired.
